Pink Energy Balls

You don’t have an idea how to use beetroot powder? Here is a great recipe that even kids will like. It is also fun to make it together with them.

120 g Cashews
60 g rolled Oats
15 g Flax seeds
10 g sesame seeds
1 tbsp Chia seeds
30 g Virgin Coconut oil
1 tbsp peanut butter
5 dates or 1,5 tbsp Agave syrup
2 tbsp Organiqa Beetroot Powder
+ 2 tbsp Additional Beetroot Powder to cover the balls

Preparation: Rinse, then soak the Cashews and dates in hot water for about 2-3 hours until they soften.

In a food processor / blender, process dry ingredients first, then add wet ingredients along with the cashews and dates and process them again for about a minute to mix well. Form middle balls and roll them in the beetroot powder to cover them completely. Refrigerate the balls for about an hour or two.
