The Latin name of cacao tree - theobroma cacao - means meal of the gods. The cocoa beans are the basic components of all cocoa and chocolate products.

Our raw cacao powder is the Criollo, which was already cultivated by the Mayas. This is the rarest, tastiest and most expensive type of cocoa, is also often called the king of cacao, accounts for 10-15% of the total cocoa production. The cocoa powder obtained from the cocoa beans has an extremely high antioxidant content, which slows down the aging process due to its natural cell protective effect. Its significant magnesium content is essential for the proper functioning of nerves and muscles. It is also known for its mood-enhancing and energizing effects.

In the 21st century, raw cacao is becoming more and more important, thanks to gentle processing, it can better preserve its nutritional content and beneficial effects. After harvesting, the cocoa beans are fermented in banana leaves in a wooden box for a few days. As a result of fermentation, chemical changes occur that allow the cocoa beans to lose their bitterness and allow a richer chocolate flavor to develop.

This is followed by a gentle drying technique, where their brown color and final taste develop.
